The grapes come from a more than 30-year-old trellised vineyard cultivated according to organic farming practices. Harvest takes place towards the end of September, when the grapes have reached their optimal ripeness. The fruit is hand-picked and transported in small crates to preserve its quality.
Upon arrival at the winery, the grapes are cooled to 10°C in a refrigerated chamber. Fermentation and maceration take place with the skins until all sugars are consumed. The wine is then pressed and transferred to chestnut, French oak and American oak barrels, where malolactic fermentation occurs. It remains in barrel for eight months before bottling.
Deep and brilliant cherry-red in colour, this wine displays remarkable complexity. The nose reveals spicy notes of clove, bay leaf and green pepper, complemented by elegant hints of vanilla and tobacco derived from its ageing in chestnut and oak barrels.
The palate is structured yet harmonious, with smooth tannins, pure fruit expression and a long, lingering finish reminiscent of plum preserve.
An excellent companion to red meats with rich sauces and aged cheeses. It also pairs beautifully with tuna belly or traditional grilled snails (cargols a la llauna).
