The grapes come from a 10-year-old vineyard cultivated according to organic farming practices. Harvesting is carried out by hand in small 20 kg crates, ensuring that the fruit is picked at its optimal stage of ripeness.
Upon arrival at the winery, the grapes are cooled to 10°C in a refrigerated chamber. The free-run juice is obtained through gentle pneumatic pressing, with a short skin maceration that enhances the fruity aromas that characterize this cava.
A second fermentation then takes place in the bottle, followed by ageing on its lees. The cava matures in the traditional rima position for more than 12 months, developing complexity and finesse.
This cava produces fine, delicate bubbles that form an elegant white crown in the glass. On the nose, it reveals aromas of red forest fruits such as raspberry and blackberry.
The palate is fresh and pleasant, with a lively and playful effervescence. The finish is long and persistent, offering a beautifully balanced sweet-and-acid profile that invites another sip.
An excellent choice for an aperitif, this cava pairs beautifully with premium anchovies, oysters and razor clams, especially when enjoyed in good company.
