Winemaking

The grapes come from a 17-year-old organically farmed trellised vineyard. Harvest takes place towards the end of September, when the fruit has reached its optimal ripeness. The grapes are hand-picked and transported in small 20 kg crates.

Upon arrival at the winery, the grapes are cooled to 10°C in a refrigerated chamber. Fermentation and maceration take place with the skins until all sugars are consumed. The wine is then pressed and transferred to chestnut and French oak barrels, where malolactic fermentation takes place. It remains in barrel for 14 months before bottling.

Tasting Notes

On the nose, this wine reveals aromas reminiscent of black plum compote. The tannins are smooth and well-integrated, accompanied by clean aromas and subtle buttery notes that contribute to a creamy texture on the palate.

Its long persistence invites slow appreciation, as the wine continues to evolve in the glass and reveal new nuances. For this reason, we recommend decanting the wine approximately 20 minutes before serving.

Food Pairing

An excellent match for red meats with rich sauces, aged cheeses, fine cured meats and game dishes. It may also surprise when paired with freshly grilled tuna.

Best served between 8°C and 10°C. Store in a cool, dry place.
